The Dutch process was developed in the early 19th century by a Dutch chocolate maker.
The Dutch-processed cocoa powder is treated with alkaline salts (potassium or sodium carbonates) to reduce the cocoa acidity. In our case, has been treated with a natural alkaline salt (potassium carbonate in less than 2%) that allows the cocoa powder to mix easily with water, to have a darker color and rich cocoa taste.
It has a neutral pH, due to the Dutching process, this means that it's slightly acidic. There is no need to add acidity when Dutch-processed cocoa is used in recipes that use baking powder instead of baking soda.
